Huangshan Maofeng Tea: One of China’s Top Ten Teas

Huangshan Maofeng Tea is a historic Chinese tea, classified as a green tea, and is produced in the Huangshan region of Anhui Province. Huangshan Maofeng Tea: Origins and Characteristics

The history of Huangshan Maofeng Tea dates back 300 years. It is made from tea leaves harvested in March and April, and is handcrafted. The tea leaves are flat, greenish-yellow, and contain small golden leaves. The tea liquor is clear with a light yellow hue and has a mellow, sweet taste. These characteristics have earned Huangshan Maofeng Tea a place among China’s top ten teas, with a reputation that continues to grow.

Production Process

The production of Huangshan Maofeng tea involves three main steps: Panning (pan-frying), rolling, and baking.

  • Panning (Pan-Frying): This step involves pan-frying the tea leaves to stop oxidation. Use a bucket pan with a temperature range from high to low (150°C to 130°C). For each batch, use about 200 to 250 grams of premium tea leaves, or 500 to 700 grams for lower grades. Stir the leaves 50 to 60 times per minute. Fry until the leaves lose their gloss and the fragrance is evident.
  • Rolling: For premium and first-grade leaves, light rolling continues in the pan after Panning to slightly curl the leaves into strips while keeping the buds and leaves intact. For second and third-grade leaves, after Panning, the leaves are left to cool before lightly rolling for 1 to 2 minutes to form the strips.
  • Roasting: There are two stages of roasting: the initial roast and the second roast. During the initial roast, the temperature is gradually reduced from 90°C to 60°C. The leaves are continuously turned during roasting. After the initial roast, the moisture content of the leaves is around 15%. The second roast is done at around 60°C, using a low flame to slowly dry the leaves. Once dried, the leaves are immediately sealed in iron containers for storage.

Brewing Method

When brewing Huangshan Maofeng Tea, 80°C water should be used; the water should not be too hot, and the teapot should not be covered. The brewing time is around 3 minutes, with each subsequent brew increasing by 1 minute. The tea can be brewed up to four times. The amount of tea used should be about two parts of the teapot’s capacity, and can be adjusted to taste. This method allows for the full release of Huangshan Maofeng Tea’s aroma and flavor.
